Tonkotsu Ramen
I have tried this place before but I went back again to see how they are doing. As you know I am from Hakata (Fukuoka) so, I grew up eating Tonkotsu Ramen with friends after school every week. Tonkotsu is one of the harder Ramen to get the stock right.
I ordered Tonkotsu, as you would, at a Ramen restaurant called Tonkotsu. Don’t order something like Miso, if you want to really taste their soup not disguised by any other taste.

It was cold! Not hot enough! Noodle was hotter than soup. I could have sent it back but I decided to be a critical reviewer and decided to mark them down. It would be about 2-3 if it was hot.

It is Hoso-men (thin noodle) and it is made according to Hakata style, but it just doesn’t have the springy-ness (Koshi) and texture is a bit flat.
I ordered Kaedama (extra noodle). They made me wait long enough to make my already cold soup even colder.

Yes they made it look trendy but that can’t be a reason to visit a Ramen joint.

Staff were generally not concentrating. They keep wanting to make us leave, even though there are free seats in the restaurants.

It was about £12. I’d rather go to Shoryu down the road..
This place would probably be on the verge of going bankrupt.
